Nutrition

The Nutrition course provides a general overview and introduction to the major concepts in nutrition, food safety, and global nutrition. The course also helps students understand the relationship of the human diet to health. The course focuses on topics including weight loss, sports nutrition, food safety, the diet-disease relationship, sustainability of nutrition around the world, and special nutritional requirements and needs across the life cycle. Students who successfully complete the Nutrition course in LaunchPad have demonstrated: • Conceptual understanding and ability to articulate nutrition principles • Application of active learning methodologies to learning nutrition • Ability to use technology to explore concepts and analyze data • Understanding through various formative and summative assessment • Ability to evaluate personal dietary habits using current dietary guidelines and nutritional assessment methods
